another day…
i am reading “the tin drum” right now. it’s a nobel prize winning novel by gunter grass about nazi germany through the eyes of a man who stopped growing at age 3. so far it’s a wonderfully challenging book. it’s difficult to get very far at a stretch, though, since i have a very attention-greedy little 4 month old!
julia is my work out every day. haha. i was a college athlete and have always worked out in the traditional sense: running, lifting weights, circuit training, etc. Now, though, my main workout is strapping her in the snugli and taking a 45 minute walk up hills with her and my dog. then i do curls, squats, and lunges while holding her. and then during “tummy time” i lay on the blanket with her and do my pilates. i kind of feel guilty and miss my old workouts, but im so tired every day just with this! i did do an elliptical workout on sunday, and that was fun. thank goodness for a helpful husband!
i havent decided yet if i’m going to take saturday “off”. i always used to, but i just havent for the past couple saturdays. yesterday i was CERTAIN saturday would be an off day, but now i’m feeling like i dont need it. we’ll see how i feel saturday morning!
i have a good recipe for a sweet potato pie tasting dish that’s much better for you:
1 large butternut squash–1/2 cup egg substitute–1/3 cup light vanilla soy milk–1/3 cup sugar free maple syrup–1/4 cup splenda–1 tsp cinnamon–1/2 tsp vanilla–1/4 tsp salt–2/3 c mini marshmallows
you cube the squash and put it in a microwave safe bowl with 1/2 inch water. microwave for 8 minutes, and then mash. usually, it takes me a little bit longer than 8 mins until it’s soft enough to mash. then, mix in all ingredients except the marshmallows. place in a 350 degree oven for 45-50 mins uncovered. then, add marshmallows and bake 5 more minutes or until marshmallows brown a bit.
1/4 of the pie is a serving size, and it only has 113 calories, pretty much no fat, 5 g protein, and 26 carbs.
